No formal training, no investors, no safety net. I didn’t come from the industry, I came through it — learning by doing, failing, adapting, and ultimately building one of WA’s fastest-growing hospitality brands.
I opened Il Locale with no chef background, no funding, and no blueprint — just an obsession with doing things differently, and better. Today, that brand turns over $150K+ a week across multiple venues.
