I’m Mathieu Bourget — born in Caen, raised in Marseille, and now building brands that break the mould in Western Australia.

I landed in Perth with €500, no investors, no safety net, and no formal culinary training — just a suitcase, a work ethic forged in Marseille, and a vision. In 2021, I opened the first Il Locale. Fast forward: six locations, 43 staff, $150K+ in weekly revenue, and a brand that’s become a cult favourite across WA.

I didn’t follow a playbook. I built my own.
